Cultivation
The cultivation method is of the traditional Burgundy type with a simple Guyot pruning, careful evasivage, stripping to promote the maturity and concentration of the grapes. We grow our vines in reasoned struggle.


Winemaking
The harvest is manual. It is destemmed 100% and vinified in open vats. The vatting lasts about 3 weeks, with one week of cold maceration, then 2 weeks of alcoholic fermentation with a rigorous temperature control.




For a good extraction of the fundamental components of the grape (tannin, anthocyanins ....), Pumping over and punching are done twice a day. The must is pressed and returned to mobile ceiling tanks for three months to promote malolactic fermentation homogeneously.

The wines are then matured in oak barrels for 12 months with a proportion of 10% new oak, 50% casks of wine, 40% casks of two wines or three wines. The bottling is done at the property by us. The wines are neither glued nor filtered.
